Culinary Intern/Trainee:
Through this training, you will expand upon existing knowledge and skills through work based training and culinary experiences.
You will learn and become familiar with:
-Set up quick cold food station and cook tickets to order
-Assemble banquet mirrors, plated appetizers and desserts.
-Make dressings following recipes for consistency.
-Learn the different methods of cooking hot food
-Understand the difference and methods behind braising, roasting, poaching, sautéing, steaming and grilling.
- Learn how to set up and cook from a hot food ticket line.
- Learn how to fill out daily production lists.
- Be able to fabricate basic cuts of meat.
- Understand and execute the basics of soup and sauce work
- Understand and execute hot food for banquets
- Understand and execute butchering of poultry and seafood.
Trainees will also have the opportunity to take a leadership role during thefinal phase of training.
