Placement description
Culinary Intern/Trainee - This orientation will introduce the participant to the hotels brand philosophy, history, standards, and expectations for guests.
Garde Manger Procedures and Techniques, during this phase the participant will have the opportunity to continue training in Garde Manger or the Cold Kitchen.
Hot Line Production and Operational Training, during this phase the participant will gain continued knowledge of prioritization of work load, protein storage, protein cooking, vegetable cooking, sauté and braising as well as ordering, kitchen maintenance, menu development and theories.
Banquet Kitchen Training, during this phase the participant will learn how to prepare banquet and catering meals to specified details on the Banquet Event Orders.
Culinary Supervisor Shadowing Phase- The participant will shadow and learn the skills needed to supervise a shift in the restaurant kitchen, utilizing the knowledge of techniques, organizational culture, policies, procedures and practices learned in prior rotations.
