Culinary Kitchen Rotation

Placement description

Culinary Arts-The objective of this training is to introduce the young professional seeking a career in culinary arts to American techniques and style through their exposure at an American restaurant. They will learn to:
• Banquets:
o Understand and execute banquet food.
o Reading banquet event orders.
o How to make food in large quantities.
o Prepping for 200+ events.
o Platting for large events.
• The different methods of cooking hot food including:
o The difference and methods behind braising, roasting, poaching, sautéing, steaming and grilling.
o How to set up and cook from a hot food ticket line.
o How to fill out daily production lists.
o How to fabricate basic cuts of meat.
• Understand and execute cold foods.
o Set up quick cold food station and cook tickets to order.
o Assemble banquet mirrors, plated appetizers, and desserts.
o Make dressings following recipes for consistency.
Additional duties as needed.

The order of phases is dependent upon business needs and participant ability and successful learning of previous phase skills.
